Miss Browns Key Lime Pie

Ingredients

Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs
  • 2 tbsps granulated sugar
  • 1/8 tsp salt
  • 1/2 cup unsalted butter, melted

Key Lime Pie Filling

  • 2 cans condensed milk
  • 1 cup key lime juice
  • 6 large egg yolks
  • 1/4 tsp salt
  • Whipped cream optional
  • Lime zest optional

Method

Preheat oven to 325

For the crust, in a food processor pulse graham crackers to fine crumbs, then add melted butter sugar and salt. Add crust evenly to deep prepared pie dish or springform pan. Bake for 5 to 6 mins or until lightly golden brown. Remove from oven let cool.

Make filling by mixing filling ingredients into a bowl. Pour filling into cooled crust. Bake for 20 more mins until the edges are set but the center is slightly jiggly.

Remove pie from oven. Let it cool down on the counter for a few mins then cover and chill for at least 2 hours in the fridge. Preferably overnight.

Top with whipped cream and a little lime zest before serving. Enjoy 🤗
